Ingredients For Blueberry Topping
- 1 1/4 cups of blueberries ( fresh or frozen )
- 1/2 cup water
- 1/4 cup of sugar ( depends on sweetness of blueberries )
- 4 TBSP Olive U Blueberry Balsamic
- 2 TBSP cornstarch plus 2 TBSP water
Ingredients For Lemon Pancakes
- 1 cup all-purpose flour
- 1 TBSP sugar
- 2 tsp baking powder
- 1/4 tsp salt
- Zest of 1 lemon
- 1 cup milk
- 1 egg
- 2 TBSP Olive U! Lemon EVOO
Instructions
Direction For Blueberry Syrup:
- In a small sauce pan, heat the blueberries, water, sugar and blueberrybalsamic until boiling, simmer for a few minutes.
- Make a slurry ( semiliquid mixture ) with the cornstarch and 2 TBSPof water.
- Add the cornstarch mixture to the blueberries and cook for approximately 1minute, until the mixture reaches a syrupy consistency. Be sure NOT TO BROIL.
Directions For Lemon Olive Oil Pancakes
- In a medium mixing bowl whish the flour, sugar baking powder, salt and lemonzest together.
- In a separate bowl whisk the milk, egg, and Lemon oil until well combined.
- Add the milk mixture to the dry ingredients and stir to combine. Do not overmix.
- Heat a large skillet over medium heat. Lightly grease skillet.
- Add 1/4 cup of the batter to the skillet, cook pancake until its starts to bubbleon top and is lightly brown on the bottom, flip and cook other side.
- Repeat with rest of batter. When ready to sever pour Blueberry syrup over yourpancakes.
