Lemon Ricotta Cheese Topped with Strawberry Bruschetta

  • 2 Cups ricotta cheese
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 2 tsp Olive U! Lemon Oil
  • pinch of sugar

Instructions

  • Preheat oven to 400 degrees.
  • Cut baguette into 1/2 inch pieces and place on a medium sheet tray.
  • Drizzle orbrush with 1/4 cup evoo. Bake until bread is toasted about 8 - 10 minutes.
  • Wash and cut the fresh strawberries into 1/2 inch pieces or smaller, preferably close to 1/4 inch.
  • Add cut strawberries into a large bowl and stir in the ingredients for the bruschetta mix , fresh basil, balsamic, EVOO, pinch of salt and pepper.
  • Mix well and set aside. In a medium size bowl, mix the ricotta with salt pepper pinch of sugar and EVOO. 
  • Mix until well blended together. Spread each piece of toast with the ricotta mixture then top with the strawberry bruschetta. 
  • Garnish with cut fresh bail and drizzle strawberry balsamic and lemon oil if desired over the top if the bruschetta.
