
Ingredients
- 1 baguette, sliced & totasted
- 1/4 C Olive U Lemon Oil
Strawberry Bruschetta Ingredients:
- 2 C fresh strawberries
- 1/2 C finely chopped fresh basil
- 2 tbsp Olive U Strawberry Balsamic
- Orange rind (used as a twist)
- 1 tsp Olive U! Lemon Oil
- pinch of salt
- 1/4 tsp ground black pepper
Lemon Ricotta Cheese Ingredients:
- 2 Cups ricotta cheese
- 2 tsp salt
- 1 tsp ground black pepper
- 2 tsp Olive U! Lemon Oil
- pinch of sugar
Instructions
- Preheat oven to 400 degrees.
- Cut baguette into 1/2 inch pieces and place on a medium sheet tray.
- Drizzle orbrush with 1/4 cup evoo. Bake until bread is toasted about 8 - 10 minutes.
- Wash and cut the fresh strawberries into 1/2 inch pieces or smaller, preferably close to 1/4 inch.
- Add cut strawberries into a large bowl and stir in the ingredients for the bruschetta mix , fresh basil, balsamic, EVOO, pinch of salt and pepper.
- Mix well and set aside. In a medium size bowl, mix the ricotta with salt pepper pinch of sugar and EVOO.
- Mix until well blended together. Spread each piece of toast with the ricotta mixture then top with the strawberry bruschetta.
- Garnish with cut fresh bail and drizzle strawberry balsamic and lemon oil if desired over the top if the bruschetta.
