Maple Bacon Smashed Potatoes

  • Heat your oven to 400 degrees. 
  • Place your clean potatoes into a pot of boiling water. Cook until a fork can poke easily. 
  • Place the boiled potatoes in a bowl and cover with Bacon EVOO and bourbon Maple balsamic. 
  • Toss to coat and add salt and pepper to taste. 
  • Place the coated potatoes on a parchment lined baking sheet and use a fork or the bottom if a glass to gently "smash" each potato. 
  • Drizzle more evoo and balsamic over the smashed potatoes and bake for 30- 35 mins. 
  • Want them more crispy leave in the oven a little longer . 
  • Garnish with fresh parsley or chivies
