
Ingredients
- 1 lb small yellow potatoes
- 1 lb small red potatoes
- 6-7 tbsp Olive U! Bacon EVOO
- 3-4 tbsp Olive U! Bourbon Maple Balsamic
- Salt and pepper to taste
- Parsley or chives to garnish
Instructions
- Heat your oven to 400 degrees.
- Place your clean potatoes into a pot of boiling water. Cook until a fork can poke easily.
- Place the boiled potatoes in a bowl and cover with Bacon EVOO and bourbon Maple balsamic.
- Toss to coat and add salt and pepper to taste.
- Place the coated potatoes on a parchment lined baking sheet and use a fork or the bottom if a glass to gently "smash" each potato.
- Drizzle more evoo and balsamic over the smashed potatoes and bake for 30- 35 mins.
- Want them more crispy leave in the oven a little longer .
- Garnish with fresh parsley or chivies
