
Ingredients
Ingredients for Fajitas:
- 1 lb flank steak or skirt steak
- 1 onion, sliced
- 2 bell peppers green & red, sliced
- 1 sm jalapeno, seeds removed & sliced
- 2 tbsp Olive U Garlic Olive Oil
- 1/2 cup fresh cilantro
- 1 cup jack cheese shredded
- flour or corn tortillas
Marinade for Steak:
- 1/2 cup Olive U Garlic Olive Oil
- 1/2 cup fresh squeezed lime juice
- 4 tbsp Olive U Habanero Balsamic
- 3 tbsp honey
- 4 cloves of garlic, minced
- 2 tsp cumin
- 1 tsp salt
- 1/2 tsp cayenne pepper and black pepper
Instructions
- Add all marinade ingredients to a bowl and mix well. Pour mixture into a ziplocbag and add the steak. Marinade overnight for best flavor or at least 4 hrs.
- Heat a grill to medium high heat. add the steak and cook for 4 minutes each sideLet the steak rest on cutting board for serval minutes before cutting into it.
- While the steak is resting, heat the olive u garlic oil in a cast iron skillet on medium high heat. Add bell pepper slices and diced jalapeno to skillet and cook, stirring frequently for 4 - 5 minutes. Add onions and cook for another 2 - 3 minutes.
- Slice the steak into long, diagonal strips.
- Assemble the fajitas by adding steak veggies and fresh cilantro to a flour or corntortilla. Enjoy!
